I'll throw out my vote for http://caribbeanvillashotel.com/ as usual.
Nobody that I've sent there has not gone back (and it's at least 20
people).

You won't find ANY "resorts" on the entire island, island
transportation is via golf cart or bike, you're within walking
distance of a town, restaurants, a store, etc, and you're 1/2 mile
away from the world's 2nd largest barrier reef.

In my opinion it's unbeaten for relax&read, fishing, scuba, snorkel,
etc and you can do all kinds of day trips to ruins amongst other
things.

If you go, sign up to snorkel with Alphonse or boat/fish/snorkel/grill
with Savaro and his rosario boat.

You should do all 4 standard snorkeling trips if you like the sea: the
standard preserve trip, the northern trip where you'll see fish
spawning, Shark/ray alley where you can swim with and pet sharks and
rays, and the night trip where you see all the bio-luminescent
creatures as well as octopi, electric eels, and all other kinds of
spooky stuff.

Do the 1/2 day reef fishing trips with Savaro and you'll stop on 1
palm tree island and barbecue your fresh catch over coconuts and chug
belikin beer.

If you go soon you can even dive for fresh lobster and crab!
