If you're ever lucky enough to have access to wild strawberries (the tiny
long ones) and some authentic aceto balsamico aged 21 years or more, omit
the lemon juice and zest and sugar, and instead gently dress some halved
wild strawberries with a few drops of the thick balsamic after they've been
nestled into the mascarpone.

We had access to wild strawberries in the Canadian wilderness thirty-five
years ago.  Don't know what it's like up there today.

It was the one time in my life that I can remember the perfect essence of
strawberry.  Amazing.
