I run vmware with windows fullscreen on a separate desktop on my mac book. I
use DW for CF development in windows.

as for mac software,

Quicksilver for quick app launching (no mac is complete without this),
transmission for bittorrents,
colloquy for irc,
netbeans and/or textmate for rails development.
cyberduck for ftp
gimp for graphics
MacFusion for mounting ftp and ssh servers as drives
NeoOffice for compatiblility with Office 2k7
Senuti for backing up my iPod
AppTrap for complete uninstalls of applications.
VLC for those adult themed videos that quicktime has problems with. :)
KeePassX for password storage
HDHomerunner for watching hdtv on my mac through the hdHomeRun tuner.
