So we simply couldn't throw away the carcass ... so into the big soup pot it went, filled it up halfway with water, and simmered it with onions and spices until about midnight. Strained it through a strainer, pulled all the bones and fat out. Put it back into the pot and in to the fridge overnight.
Put it back on the stove, added some left over turkey, celery, more spices, salt, pepper, and a bag of soup veggies and left it to simmer all day. Tasted it a little while ago and it is DELICIOUS! In about 45 minutes, we will lay waste to it over some whole grain egg noodles. YUM! Definitely turned out much better than I thought it would. The second day of cooking really pulled the flavor together.
