This new Wizen is using an open fermentation technique, by open fermentation
I mean open tank, the yeast that they use is so active that it forms a foam
barrier which seals the tank

Meh, Anchor is close to a conglomerate, though I don't mind them much.
They mostly just don't make beer that interests me. Their insistence
on using their "steam" yeast loses it for me. A "steam" beer (for
those playing at home) is a hybrid between a lager yeast and an ale
yeast. It ferments at an in between temperature and has something in
between the characteristics of a lager and an ale. All told, well, I
find it middling.

I also happen to loathe wheat beers but that's just me. Good on them
for trying interesting things but, meh, totally uninteresting beer in
my opinion.
