Well tell you what I usually do. I talk them into my name on their website
as their Technical and administrative contact through Like (register.com) I
tell them this is a necessary step for me to do development and they usually
go for it. I then hold their site hostage as long as they do not pay.. I
always leave them as billing contact so they can still pay for the name.. I
also have gotten to where I ask for 50% up front unless I know them then I
only ask for 1/3 up front.. I always ask for upfront.. Something else if you
have DSL or some other broadband you can get a static IP  and show them the
work on your machine then transfer based on you getting paid. Also use the
CF encrypt.exe and refuse to give them the source code until your paid.
Somebody also told me that their is locking software to make files
unwritable both of these options make take some time, they won't care until
they want something changed.. When you create graphics use a lot of sliced
images and don't give them the source until your paid.. These are some of
the things and A few other tricks I have picked up along the way..
