So here's my two cents on it.. I didn't look to me like the girl was
trying to assault the officer, she was trying to get his attention by
patting him on the shoulder, he could've just ignored her, brushed her
off told her to shut up or whatever.

Where the officer is in the wrong is when he slapped her, that's
assault, she defended herself.

While you're right about not interfering when they're legitimately
doing their job, and it's a job that I have a lot of respect for.
Being a police officer is not an excuse to bully or to think that your
above the law that your supposed to uphold.
