Well, there in lay the issues of genetics and culture. Someone can be a Jew because their mother is Jewish or because they have converted (a long and arduous process). In most cases, a Jew is genetic/cultural which means they have Mediterranean genes. How much all depends on how many relatives they have who are Jewish because of conversion. My pale skin and red hair says that I have some genes that are from a convert in my family tree somewhere (red hair is very prominent in many Jews). The skin tone and related features of some of my relatives speaks to the Mediterranean genes. And yes, there are Jews with no Mediterranean genes, though its very rare and usually due to being a first or second generation convert. In Judaism a convert has the same status as someone who was born a Jew so they can marry as any other Jew (I have a friend who converted and married into a well placed Chasidish family). As conversion is rather rare, the chances of 2 converts marrying is rare and the chances of their children marrying converts or children of 2 converts is even rarer. Now that I've defined Jews and how they are Mediterranean, maybe you can define what a Caucasian is. :)
