Java baby - OSX comes with Apache and I believe Tomcat. Not sure if PHP is out for it, but it shouldn't be far off. As for ColdFusion, well it's a supported development server environment.
If your looking at stand alone or client server dev then the tweaked jre it comes should fit the bill.
