Yes. You can usually use SNMP to log in to each AP and read the MAC-cache. If provisions are in place for automatic log acquisition you should be able to see the MAC address in the ARP-cache of the routers, the MAC-cache of the APs and the DHCP log files. Depending on whether access to the network is authenticated, it might also be in the RADIUS logs.
Also, tools like WLSE, Campus Manager and Packeteer can do this automatically.
