I use CFMAIL to deliver quite a large amount of emails... I was aware of the problem in previous versions but assumed it had been fixed... and so far... fingers crossed it seems to be holding up. However, as traffic and usage of CFMAIL grows I know this is not an ideal solution and will start looking at the alternatives.
FYI. Got CFMX 6.1 (with update) on Win2K with single CPU and 1Gb RAM using SMTP server on Apple XServe - which is on the same local network. Good luck!
