@ajelenak-thg For all real world applications I agree with your statement that 
"The convention should probably require the use of grid mapping for all 
geospatial coordinates that are not simple lat-lon." The only common exception 
that I know of is results of theoretical validation cases which are purely x-y 
based without any reference to the specific location on the earth. This 
frequently also holds for lab validation data which is referenced typically 
only to the geometry of the flume. It would be nice if we could flag such cases 
one way or the other without a CF requirement to place it explicitly somewhere 
on the earth.
