Well, it really depends on how closely you need your laptop to mirror any 
production environment you're building for. If your target is Solaris / 
Oracle, then developing on Windows / SQL Server will probably hurt you 
(because SQL Server and Oracle are so different). Depends on how much SQL 
you're developing.

Linux / Oracle (free!) seems a good option. Linux is very stable and fast.
  There's a lot of good tools for it. Linux is case sensitive so developing 
on Linux also means you won't have pain through trying to port 
CaSeInSeNsItIvE Windows code to Unix.

Mostly, this is an issue of database support.

I'm doing some very Oracle-specific stuff right now which means I need a 
network connection to an Oracle 9i instance (since Oracle doesn't run on 
my Mac).

In general, when I'm not pushing the Oracle envelope, Mac does just fine 
for me and I find it less hassle than Linux for day-to-day work (since you 
also need to deal with documents, email, graphics etc etc).

Make a list of exactly what software you need (generically) and then pick 
good options for each platform and make your decision based on that.

Just for the record, here's my development environment:
- Mac OS X (relying heavily on BSD and Java 1.3.1 environments)
- CFMX port (with the known non-working stuff)
- Oracle 9i drivers and a 'net connection to a suitable instance
- SQL Grinder for working with databases
- DWMX for some editing, vi for others
- Flash MX, Fireworks MX (for all graphics, rich client stuff)
- Mac CVS for version control
- Office X (a partially necessary evil)
- Fire (multi-client chat app)
