On windows: In the SDK there are two JVM's server and client. If you
download the JRE you only get the client jvm.

I'm not sure if this applies to other platforms, I haven't checked, I would
love to know if you wouldn't sharing how the Solaris jvm's are distributed.

It is very possible that you will see performance differences, I haven't
done any tests though so I can't say for sure. The server optimized version
*should* run server applications (like ColdFusion) faster than the client
version though.
