You'll also want to delete all the CFM file in the 'parsed' directory
when you do this, as those are the cached execution plans that the
cores have created.  Not strictly necessary, but there is some
potential weirdness that can arise if you don't, so I'd recommend it.

Production mode will NEVER look at the XML, so you must explicitly
tell the cores to reload the XML any time it changes (including
changing from production back to development).  That's what Sandy's
snippet above does.
