You can download CF8 and if you want to, Dreamweaver CS3 and install them on your computer. They have tutorials that come with CF8. You can also go to the bookstore and get CFWACK (ColdFusion Web Application Construction Kit) to get started. There are also tutorials on-line. Just Google ColdFusion tutorials.
