I think part of the problem showing actual site code is that many sites have a lot of "intellectual property" that either can't be exposed for the protection of clients and or ideas OR because it would potentially open up the site to external attack. I know most of the stuff that our site does is not even available for the public to look at as HTML - let alone as source code.
This is why I suggested grabbing a copy of FarCry which is completely Open Source and an excellent example of development with CFMX 6.1 in all it's glory. And why I also suggested the benorama site - because it is a good example of a framework in CFMX. Others have also suggested Mach-ii in the "framework" category. In addition, the Macromedia site has a lot of full applications in their Exchange portion of the site that are available for download and viewing.
