I think the whole FLEX build-up was to make us all aware of a future product and you better sign up for the beta, as first round of betas are already underway, and those who didn't make it may stand a chance at beta2 & so on.. I think i read that MM are taking very small baby steps with this puppy, in order to get the dev process fully smooth and fluid.
** And now a word from my sponsor **
Rumour has it that Microsoft.com was really built with FLEX and that Microsoft is really the evil child of Macromedia and Macromedia is really buying Microsoft and no the other way around!

Since it is rendered out as a swf, and the whole thing's shrouded under a heavy NDA I wouldn't be surprised to learn that Flex powered apps "walk amongst us" right now without our knowledge... ;-)

Gareth,
Unfortunately, despite Macromedia's fairly open stance on Flex information, developers on the restricted beta program are under strict NDA and cannot show what they are up to without specific permission from MM.
You won't really see anything emerging regarding Flex that isn't tightly controlled by MM. That said, the best place to pick up on Flex information is likely to be the blog of Flex Evangelist Christophe Coenraets (http://www.markme.com/cc/). Christophe already has several screenshots showing off Flex UIs using the standard, undressed Flex components.
