I don't think there is any one single "best practice" model, it really comes
down to specific needs. 

If you have one box running the web server, cf and the database and you are
not experiencing load problems then stick with one server. If you are
experiencing load problems - look at where they are coming from and act
accordingly (Is it RAM, CPU, disk access, etc....) If its just a RAM issue,
my first reaction would be to buy more RAM - it's a relatively cheap & easy
fix. 

There will be network latency & and added overhead if you run on two boxes
but in some cases this will be offset by the other performance gains.

This is all about straight up performance and resource usage - best practice
server architecture should also look at redundancy which is a whole other
kettle of fish.
