The specs varied by car (Corvettes has 300, 350 instead of 275, 325 for
the Chevelle) due to exhaust and brand (Corvettes always had to have
more power). Add in headers and you have the same power no matter which
car it was in.

Not quite. Since the pistons are flat, I would assume the "L30" 327/275
motor, but I can't be sure. If you have any casting numbers, piston
numbers, cam ID numbers, etc, we can tell for sure. Is there a number
on the block, stamped into the front passenger side that looks like
"T0226EV"? You can use this to decode the engine. You can look here

OK, this is easier, but only after we know a bit more about the heads
and your plans. You can easily build a 327/350 clone motor with a
slightly better cam for superior bottom end (modern cam profiles are
better) that will be great for an all around motor. What transmission
and type of driving do you want to do? Do you want this to be a daily
driver? Drag race? Street/Strip, autocross, road race? Also, what's
your budget? If you upgrade to a roller cam you can get even more
radical and keep the bottom and idle.
327 engines don't have quite the torque of the larger motors, and they
like to rev. This is usually better for a smaller car. The ideal
starting place for a heavier Chevelle would be a 350 and make it a 383.
I'm not sure if anyone had stroked a 327, but this might be a way to get
more from the block you have, if that is your concern.
