I liked my old 327 that I had built. Started life in a '68 GMC 3/4 ton, then made it into my first '66 Chevelle, and then tucked it into a '69 GTO (actually it was a LeManns, but it did have a GTO hood :-))
I made a few modifications - 12.5:1 compression, 700 cfm double pumper, nasty litte cam...fun to drive - when I had the right gas. As they both have a 4" bore, a 350 essentially is a stroked 327. (327 stroke is 3.25", 350 is 3.48", 383 is 3.75"). This is usually better for a smaller car. The ideal starting place for a heavier Chevelle would be a 350 and make it a 383. I'm not sure if anyone had stroked a 327, but this might be a way to get more from the block you have, if that is your concern.
