Here's my two cents worth:
We are going to restore our first Chevelle.  It's original colors were "light palm green metallic" with Jade green interior (Yuck) !  We bought it with red paint, white stripes, white vinyl top, and white (double yuck) interior with bench seats and a column shifter.  We are going to convert it to red paint, black stripes, black vinyl top and black interior with bucket seats and floor shifter.  All of these are personal preference.  We want to drive the car and like what we see.  We may or may not enter contests and I have no clue if this will effect our ability to win, but we want to look good TO US.
 
That's just my opinion.  I'm sure the other guys who are the "experts" can tell you what non-original colors will do to your ability to win in a show.

 Okay folks;
     I'm looking for opinions. My Chevelle is a 72 Malibu 307 from the factory. I have already changed the drums to rotors but other than that its like it was built. I have the numbers matching 307, but right now it has a 400sb built to go fast. That can be replaced with the original. THE QUESTION IS, should I paint it the original Gulf Green Metallic?(which I do not like) or paint it a color I can stomach. I know I answered my own question just now, but I want opinions. I'd like to show it some day, do you lose a lot of points for changing the color? Should I care what others think? ,build it the way I want it?, or try to keep it perfectly kosher with the build sheet?. I'd like allot of opinions, THANKS!
