It's definitely the way to go, no doubt! I haven't heard anyone really complain about any of the kits out there, be it Classic Performance (http://www.classicperform.com/), Engineered Components (http://www.ecihotrodbrakes.com/index.html), Master Power Brakes (http://www.mpbrakes.com/), Stainless Steel Brakes (http://www.stainlesssteelbrakes.com/) etal. I know some prefer to piece it together from any 69-72 A-body and auto parts stores so they know exactly what they have and can get replacement parts easily (plus it generally costs less), and some that prefer kits because it's all there, clean, instructions, etc. and generally use stock-type parts anyway.
Most kits are close to the same price, so that's a non-issue, and all use about the same type of parts so stopping performance is comparable. If you're looking for something a little 'showier' and plan to use 16" or 17" wheels, look into Baer 12" or 13" Track systems (http://www.baer.com/). A bit more expensive (10%-15%) but a great look!
