I've done exactly what you describe to my  '69 Malibu, except that I tend to go to the track 2-3 times per year with it for fun.
I'tll cost you far more than $2k, I can assure you.  I have over $5k in parts just in the rear end;  wheels and tires will run you $1k plus.  Now, I do have a race ready Ford 9" setup with all the goodies, so it can be done for less, but not a lot less.  Then there's wheel tubs, fabrication, rebuild trunk floor, etc, etc.
