Don't reveal customer lists > or trade secrets for example. I have no problem with those. I have a strong contempt for jurists. They have the viewpoint that you can cover live situations with literal juristic texts. But that can never be done. So their model of the world is wrong and they are proud that they use this wrong model allready for over 2000 years. Stupid guys. But lawyers earn a lot of money, so they are sly enough not to change their stupidity. Although the juristic world claims to promote justice, the countrary is true. People with more money can pay a better lawyer and will win in court (see B$G). The NCA you are asked to sign is made by a lawyer payd by the firm where you try to get a job. He did not make any pains to make a contract that cover just what is needed. It is overkill that is disadvantageous for you. But the lawyer lacks the brains and the will to do a better job. When you do your work as they do, you will be fired within 3 weeks! When you want the job, try to change the contract in such a way that your new boss get what he needs, and that it is not needless disadvantageous for you.
