You won't need hands-on token ring knowledge for the CCNP tests but you'll definitely want to have some for CCIE studies.
For switches, you might try to pick up a 2901 or 5000. I'm using a 1200, as well, but it was free. It can't run any recent software releases so you'll want to get some more experience on newer switches if you can. We have a couple 5000s at work so I get to tinker around with them here. You might want to check with Brad Ellis at www.optsys.net. He can probably hook you up with what you need based on what you can afford.
