Depends on how certain you are of the timing.  The dog's sperm count an hour
after a previous ejaculation is 70% of what it was in the first ejaculation.
(I can dig out the study for you if you need it.)  Under normal conditions,
sperm probably live about 5 days, and have been recorded in some instances
to still be alive in the bitch 11 or 12 days after they were deposited.

I would say that "two" is the average number of breedings when you are
certain of the timing.  If you know the LH surge, then you breed on day four
and six, or five and six.  Some say that starting earlier and leaving more
time between breedings gives you a greater chance for female offspring, but
I have not found that to be the case.

But there are plenty of breeders that don't do any progesterone testing.
Some just start breeding when the bitch starts "flagging" and will breed
every other day until she stops "standing".   I have known breeders to do as
many as five or six breedings, over a 10-12 day period of time.  I hate
getting those bitches in for whelping, though -- too much uncertainty about
the due date!

Some stud dogs are pretty good at waiting until the right day to be
interested, but in generaly, most of them will breed a lot longer period
than necessary if the bitch is willing -- one I have here now is
consistently interested about 3 days early.   Some bitches may be pretty
good at indicating the right time, too -- some of them won't let the male
come near unless the time is right.
