I've tasted many different versions of this dessert and this is one of the
best for both consistency and flavor ...

Tiramisu

Ingredients:

1 Tablespoon Instant Espresso Powder

1/2 cup hot water

4 Tablespoons brandy, divided in half

1 cup heavy whipping cream

1/2 cup sugar

8 ounces mascarpone cheese

1 yolk of a large egg

1 (7 ounce)package crisp, dry lady fingers

several pieces semi-sweet baking chocolate (or any good shaveable dark
chocolate)

Method:

Set a medium mixing bowl (preferably stainless steel) in the freezer to
chill.

Dissolve espresso powder in hot water in a quiche of pie pan.  Stir in 2
tablespoons brandy, and set aside.

In the chilled bowl, whip cream with an electric mixer on high speed  until
thick (almost whipped cream).  Add sugar, mascarpone, egg yolk, and
remaining 2 Tablespoons brandy.  Beat at medium speed until combined.  Beat
on high speed until thick and fluffy with the consistency of whipped cream.

Divide mascarpone mixture and lady fingers into thirds.  Dip each lady
finger into the dissolved espresso, coating both sides (being careful not to
let them get soggy!!).  Place lady fingers side by side in the bottom of a
glass bowl.  Spread 1/3 of the mascarpone mixture on top.  Then shave some
semi-sweet chocolate over the top.  Repeat this process two more times.
Chill until ready to serve.  Note I usually make this the night before I
intend to serve it or early in the morning.

To serve, spoon onto desert plates or into shallow dessert bowls. I like to
garnish with fresh berries when in season or pomegranate seeds in the
winter.  The Pomegranate seeds make for a very festive looking dessert.  I
traditionally serve this at Christmas.
