pick one for each. not only will this make your support staff (you?) happier, 
but it will lower the requirements of the server since less RAM will be used 
(shared libraries) ... if you choose applications that meld w/your desktop of 
choice, you should also see a benefit in CPU cycles as you'll only be running 
one set of desktop support processes.

for the convergence demo we had Pentiums (not P2s, P1s) in the 100MHz range 
with as little as 16MB of RAM and they all ran at very nice speeds.

we had 5 or 6 stations on a PII-400 w/512MB of RAM... the RAM utilization was 
~200MB with every station running something different (e.g. web browser, open 
office, games, etc..) but i think that could be made better as well.. the 
speed was quite good.

IIRC the fellow who did the largo, fl set up said that there was ~8MB RAM 
usage per user on top of the normal base required (which was shared amongst 
all users due to how libraries/executables are shared in Linux)

i'd also recommend looking into an SMP machine. a dual processor Athlon system 
is pretty cheap these days and have two processors available should give a 
boost in responsiveness. last i checked you could get a dual Athlon system 
(the MP 1400 or 1600) with .5gb of ram and lots of disk for ~$2k.

IIRC ... there is the city of largo, st mary's catholic school also in 
florida, some schools in portland, and several others ...
