Ah, yes, that does sound like something (at least some versions of)
NFS would not like.  My NFS experience is limited, but I do recall
reading that your client would likely freeze when doing that.  There's
only one way to find out, though :-)  Just give it a try when it won't
inconvenience anyone.  If it does freeze up, simply rebooting the
client after restarting NFS should get it back in a usable state, so
hopefully you won't have to do it that often.
