I have not taken the course, but you might want to take a couse on 
generic administration and of course you will have the specific interest 
of administration under Red Hat -- I think it might serve you better in 
the long run.

On the plus side, taking the Red Hat course will be

    * Red Hat specific - that is what you are after (assumption)
    * Leads to accreditation
    * Widely recognized
    * Red Hat is a strong following within corporations - good for
      employment with Fortune 500 companies

On the plus side, taking the Linux Administration course at the U of C 
continuing education

    * Not distro concentric
    * Leads to accreditation - different
    * Likely more local people networking for support (including
      instructor) after the course
    * I think there is also a discount for level 2 CLUG members (someone
      correct me)
