I am a big fan of the system I ended up with (it has grown and evolved
over the last ten years).  I use Cyrus for IMAP & POP.   LDAP stores the
account info (so no email users have shell accounts, plus replication to
a backup LDAP server is nice).  We have been using horde/imp for many
many years.  I like it but it is not the most intuitive package to
install.

I do like horde's support of sieve (for server side mail sorting and
filtering).  I also like the calendar module.  It can read my .ics
format calendar on another server (WebDav+sunbird/lightening is pretty
sweet).

One note, which ever webmail front end you choose, I would recommend
protecting it with .htaccess.   What we have been doing with our clients
is password protecting the login page (usually by pointing Apache to
Active Directory via LDAP to get user credentials).  This protects you
from worms that try to exploit bugs in php apps.  Horde can also be
configured to use this for authentication so users do not need to enter
their credentials twice.
