Of course you should only accept unauthenticated email for the domain(s) you are hosting. What you are looking for is relay domain. Which are the domains you are supposed to be a relay for.
Is mail not working for everyone, or just a couple of domains? The logs are your friend here. You may have to enable proper logging. As an aside, the one client that I have running Exchange 2007, is using a Linux box as the public SMTP host. We do virus, spam, and account checking here before relaying to Exchange box.
