After digging and trying out a couple things, I have settled on a 
solution (for now).

I found a good article over at 
http://workaround.org/articles/ispmail-etch/ (http://workaround.org has 
some other interesting articles as well...).  This article covers 
setting up a Postfix/Dovecot/MySQL based system, with Amavis and 
Postgrey (greylisting) if desired.  There's even a bit in there on 
setting up Squirell (I'm going to try out RoundCube though).  This 
article is thorough, though you'll have to make appropriate changes for 
your set up (db passwords, etc.).

Overall, that article is very detailed and covers everything you need. 
In my case I installed on a Ubuntu 7.10 server, but the commands were 
all the same.  The only catch seems to be in the default behavior for 
Dovecot SSL certificates - on Debian Etch it would seem it defaults to 
the dovecot.pem files generated with the listed commands.  However I 
kept getting the default Postfix certificate.  I had to add the dovecot 
certificates in the /etc/dovecot/dovecot.conf file.  (A search for 
".pem" will find the only two lines there - change the paths accordingly).

So far, all seems well, and the system feels snappier than the old 
Zimbra VM running on the same box.  (I built the email system in a VM as 
well, so that's a non issue in comparisons...).

An added bonus of doing it myself is that there is no "special" web 
server set up for the system.  Zimbra installs "zimbra-apache", which 
needed port 80 and 443 preventing other websites from using those ports. 
  So now I can run the email system on the same VM as my web server - 
one less (virtual) box to manage.

Dovecot seems to be the new player on the block, compared to Courier and 
Cyrus.  But from what I've seen so far, it's much easier to setup and 
configure - especially with regards to SASL (Dovecot has it's own SASL 
routines).  When all is said and done, the system is "just working" the 
way I was expecting.

I'll try this out for a while and see if there are any glaring problems. 
  I fully expect a few hichups over the next month or so.  Greylisting 
will take a bit to stabilize at least (auto whitelisting of common 
domains....).  I can always try Zimbra/Scalix/Open Xchange/etc. if/when 
I decide this isn't working for me....
