Of course even with Ubuntu, I still go and get the most recent drivers
directly from nVidia.

In my opinion it is stable.  The most stable release is usually the LTS
version, which is what I put on servers, even in my own house.

The main difference is that Ubuntu goes further to cater to less
sophisticated users.  What this means is that some things are a little
more work than with Debian.  Also due to the Debian political structure
and the resulting policies, their packages tend to be older (of course
this really depends on what we mean by Debian, they have several
releases, though I can only recommend stable unless you know what you
are doing).

Basically, if this is just for a desktop or laptop machine, I would go
with Ubuntu.  Of course Fedora is probably an OK choice, I just prefer
the Debian style system.
