You might like to take a look at Cube Carts new version 3.x beta (http://www.cubecart.com/site/features/), which aims at being standards compliant.

Kavora (http://www.karova.com/) is built to be standards compliant, but that is not a cart you can download, you have to host the whole thing on their server, and I have found their email support to be poor.

If you are going to use something like Plone, be willing to spend a lot of time learning the system, because, from my experience, it's not so easy to convert your templates into Plone templates (just the learning curve). Drupal seems much more straight forward, but what CMS really is?
