Professionals sometimes do things because they are faster and more efficient, not because they are better. They also get a lot more practice! I have finished edges with a torch, and found it leaves you with uneven thickness along the edge, which may affect sealing on something such as a window. The edge sort of "mushrooms". For some applications, that would not be an issue. I find it is not very daunting to finish the edges starting with a belt sander and then hand sanding with a block before going to a buffing wheel and compound for the final polish.
