You cannot go from single to raid. Raid to single is pretty simple, altough not fully clean. Rip out one of the disks, and edit /etc/raidtab. Everywhere where it says 'nr of disks:2' change it to 'nr of disk1:1' During boot the system will detect the raid superblocks and the lcd will briefly claim a failed raid array, but the system will work nicely.
