I've been digging a bit in the pyglet users list on this subject. It looks like the combination of pyglet(/cocos) with external GUI's is not a trivial task [0][1]. And there are some people (as Richard noted) developing pyglet GUI's that might be worth looking at [2][3][4]. Maybe it would be interesting to choose one of those projects and help develop it further.
