That's why I use disk *images* instead of just copying the disks in the first place. Most Apple stuff on disk images is OK with copying, but it won't work for a lot of multi-disk installers because the information containing the name of the disk (not just what it's called in the Finder) is lost when you copy (as opposed to making a disk image). For stuff like that, I generally collect the images together and burn them to CD-R, after which I just mount them when I need to use them.
