Because that's what kills you.  Eventually ;)

There are several nasty carcinogens in flux vapour (though I can't think of
specifics at the moment), and soldering generally produces a fair bit of lead
vapour (and any other heavy metals that happen to be present in the solder).
Heavy metals, of course, are generally mutagens or carcinogens in levels above
normal environmental background, and lead in particular leads to decreased
mental acuity and can be transported across the placenta in pregnant mothers,
causing birth defects and retardation in the child.
