Because the CC is woefully under powered and has the potential for so much more.
The Plus and SE are fine machines because they have a B&W screen and happily run System 6. There is a huge body of software which will take full advantage of these machines. Yet even then, some people want to upgrade their SE to an SE/30 and upgrade the B&W display to greyscale so that they are taking full advantage of their machine.
The CC is different though: it was an underpowered machine when it was introduced. It can support thousands (if not millions) of colours with a simple upgrade and a relatively small body of colour applications take advantage of slow processors, it is stuck in the world of System 7. This means the machine is as slow as a dog unless you are using it as a glorified SE. So we upgrade it.
Besides, a lot of us don't even go the PowerPC route (the screen is too small for PPC software anyway). I want a blazing fast and relatively compact 68k. A Mystic offers that.
