I do not know what System you are running.
Under OS X, Disk Copy will not work with floppy disks (afaik).
Dragging the .image file on StuffIt Expander will mount the image in OS X. You can copy the files in the Finder.
However, if you want to create a startup disk from an .image, you will somehow have to "bless" the system folder on it, but otherwise there should be no problems...
