The LCs are excellent for this, I agree. If you go for an LC and want a little power go for a III, III+, or 475. If you do want to swap out the parts for Classics as Sean suggested you'll need a I or II (which are somewhat more common but don't have as much processing power). The Classic II, Color Classic, and LC II are all basically the same computer.
A few other ideas if you have a school in your area that is throwing older stuff out: -Mac LC 5xx: Any of these makes a good machine for 800K transfers. You get a built in monitor and in some cases a CD-ROM drive. The speakers on them aren't bad either so you can set it up as a stereo somewhere if it's got a CD. Check elementary schools in particular, as the LC 5xx series are just about done for in kindergarten classrooms these days. -Mac Classic: This is my machine of choice for transfers since it accepts an external floppy drive. I use a Classic with an 800K drive. Best of all you can start a Classic I up from the ROM disk so you can put that hard drive in another computer. Not quite as common in the surplus market today but still findable. Alternately you can find an SE FDHD or SE/30 but the chances of finding either (especially the SE/30) decrease every day. -Mac IIci: Like the LC you can put a monitor on it but I guarantee you that you'll fall in love with this one since the IIci was and still is an incredible machine. I've found that LCs are more plentiful in school surplus and on eBay, though, and usually sell for much less. -Mac IIsi: See above, but you can swap the RAM out with an SE/30 if you upgrade your SE sometime. Not as fast but more readily available from surplus. -External FDHD floppy drive: Applied Engineering used to sell one for 800K SE and Plus models. They're not that common and I have found them to be quite rare. Apple made one too that is even rarer.
