Well, from what I can see in your log, you have disabled the
openvpn-s2s service. You need to re-enable it:
db configuration setprop openvpn-s2s status enabled
signal-event openvpn-s2s-update
It should start working after that, or at least, you should see logs in
/var/log/openvpn-s2s/
