You'll have to enable the spell checker plugin in the preferences dialog. Then you can check to see what languages are listed under Tools : Set Language. Weird this doesn't work for you. I have apell-en and apsell-fr installed, and both languages (and serveral of their dialects) show up for me in GEdit and Evolution. Evo spellchecks correctly, too. I installed both languages before first using Evo. Maybe that's it? Try nuking/moving your ~/evolution directory. Spanish dictionary is not available to enable.
