Ok, sorry for being so slow. (i don't know gnome well, but now i remember)
I guess it's more a gnome problem and as you say it needs tweaking in the
menus..
Definitely the Multimedia/Sound is a good category for sound related
stuff. There is Video and Graphics also under Multimedia; everything under
Multimedia without submenus would be a mess..
