It'll stay this way until you explicitly disable it for this runlevel. Disabling the dm service in the services selection in DrakX *may* have this effect, I haven't tested that. I believe the later question of whether you want to start X at boot just changes the runlevel in inittab (3 or 5). KDM (I imagine GDM is the same way) will create a file in your home directory called .desktop if you select any specific window manager (aka anything other than default). If you want your .xsession to be used, you have to make sure you don't have ~/.desktop, and also that the DESKTOP variable isn't defined in /etc/sysconfig/desktop As for .xinitrc, it appears it isn't getting sourced or run from any of the system scripts anymore.
