Also have a place ready to put that broiler pan down. You will probably not want to put it right on your counter top. Think about if you would not place a pot you have just taken off your burner on a surface then don't do it with your broiler pan. I have a silicone mat that I hate for baking but love it for keeping on my counter and placing my cast iron pots and/or lids and any other hot items (besides me?smile)

As others have mentioned cooking is very quick and it is easy to over cook meats especially fish. Find a cooking chart with times and temperatures. Also, when you take the pan out of the oven be very careful in keeping it straight as possible. My dog ended up with a new york strip, she ate well that day, even if it was only half cooked. She likes her stakes rare. _______________________________________________ Cookinginthedark mailing list [email protected] http://acbradio.org/mailman/listinfo/cookinginthedark Scanned by the Barracuda Spam Firewall at CPWS Broadband _______________________________________________ Cookinginthedark mailing list [email protected] http://acbradio.org/mailman/listinfo/cookinginthedark
