Olive Oil Mashed Potatoes 

A healthy take on a traditional Thanksgiving favorite 

(Serves 8)

3 pounds starchy baking potatoes, peeled and quartered 

1/4 cup extra-virgin olive oil 

1/2 cup 2 percent milk 

2 tablespoons white wine vinegar 

1/4 cup snipped fresh chives 

Coarse salt and freshly ground black pepper 

This recipe is: 

Vegetarian  

1. Boil the potatoes in salted water until tender, 20 to 30 minutes. Drain and 
return to the saucepan. 

2. Heat the oil and milk until warm and add to the potatoes. Mash the potatoes 
while the pan is still over the heat, then add the vinegar, chives, salt,

and pepper. Taste and season with additional oil, vinegar, or salt as needed.
